PURPLE KOHLRABI
This bulbous vegetable is often referred to as the cabbage turnip, but with the virtues of neither. The bulbs are sweeter, juicier, and crisper than turnips, with the mild flavor of broccoli stems. The leaves may be cooked and have a kale-collard flavor.
This food is very low in saturated fat and cholesterol. It is also a good source of thiamin, folate, magnesium and phosphorus, and a very good source of dietary fiber, vitamin C, vitamin B6, potassium, copper and manganese.
